Key Lime Bars Recipe With Graham Cracker Crust

My Key Lime Pie Bars are outrageously delicious and you need less than 10 ingredients to make them! These squares are zesty, filled with lime juice, and are the perfect springtime dessert! And the crust is seriously irresistible!

Something about springtime just makes me CRAVE lime-y desserts that are citrusy and tangy. These key lime pie bars are always the first desserts I crave when spring finally hits. It makes me feel like the humid wind blowing through my hair came straight from the Florida Keys. Or like I’m on vacation or something!

And my crust, I guarantee, is like no other you’d had before. That’s because I add a few not-so-traditional ingredients for key lime pies into the crust. I know you’re giving me the look, but let me say that cinnamon and ground pecans are going to take these bars to the next level. The Cheesecake Factory uses nuts in some of their cheesecake crust to make the flavor so unique, along with a pinch of cinnamon. The cinnamon flavor isn’t noticeable if you’re worried about that. Just a quarter teaspoon makes the crust so delicious but keeps the eater guessing what it is that makes these key lime pie bars so addicting. You’ll also find a few typical ingredients like a boatload of fresh lime zest and lime juice in the filling.

I like to dip my knife in hot water before attempting to make cuts. Cut all the way down to the crust with a very sharp knife, then wipe the knife between cuts to help keep things clean. It also helps to redip your knife in hot water between cutting pieces.

I think compared to most key lime pie bar recipes, my recipe has an abundance of crust – some might say too much. Something to consider if you usually prefer significantly more filling to crust. I’m the kind of girlie that wouldn’t mind pushing the filling-to-crust ratio closer to 50:50. But this recipe has a 60% ratio of filling to crust and I love how they slice up beautifully!

I’ve also made these into lemon pie bars and they are absolutely fantastic! I love topping them with a dollop of whipped cream.

They're a delicious recipe for spring, summer, or whenever you're craving summertime flavors 😉 And I find they're easier to make than traditional key lime pie.

Key Lime Bars (quick And Easy!)

To get started, first we make the graham cracker crust. The crust for these pie bars is a little thicker and deliciously crunchy. It's made by stirring together graham cracker crumbs, sugar, and melted butter - then pressing into the bottom of an 8x8 inch square pan. Baking the crust for 10 minutes on its own helps to keep it intact and gives a crunchier texture.

The key lime filling is so creamy and deliciously tart without being sour. To get the perfect key lime flavor and texture, there's only 4 ingredients:

First beat together the cream cheese until it's nice and soft, then mix in the sweetened condensed milk. Then the egg yolks get mixed in one at a time, and last but not least - mix in the lime zest and lime juice.

Why are you adding cream cheese? To be totally honesty - cream cheese isn't traditionally in key lime pie, but I wanted to add just a little to make the pie bars extra smooth and extra creamy. The cream cheese also helps make the bars a little sturdier, and therefore easier for serving and transporting.

Can I use regular limes instead? Absolutely. My only recommendation is not to use regular lime juice from the bottle because it tends to be too tart. If you're using regular limes, make sure to freshly squeeze them. If you can find lime juice in a bottle that states that it's from key limes - that works too.

Then for the final hurrah - they're topped with sweetened whipped cream and a little more lime zest for garnish (totally optional).

Hello hello! Anyone else totally thrown off by the long holiday weekend, as per usual? Whenever there is a Monday holiday, I am lost in confusion as to the day/time/month for a good, oh, three to four days. I’m hoping that means that, by the weekend, I’ll know that it is FOR SURE Saturday, but until then? It’s TueWursday.

In any case, I hope your weekend was beautiful. We had an extremely chill weekend filled with beanbag toss games in the backyard, day drinking, movie-watching on rainy afternoons, delicious pizza with dill pickles on top, a few house projects and just a lot of relaxing. We’re coming into a week with a lot going on, including having the first floor of our house painted (!), so it was a cozy and calm start to summertime.

When I gave one to my ever-picky-eater Avery and asked her if she liked them, she looked me square in the eye and said, fully serious, “Like them? I LOVE THEM.” And that’s all the proof I need to tell you that these are the best Key Lime Pie Bars you’ll ever have.

I’ve grown up on Key Lime Pie, and I have no plans to stop enjoying it anytime soon. When we’d take our annual vacations to Florida, my dad would always, without fail, purchase a Key Lime Pie from the local pie shop — and after that pie shop closed, he continued the tradition with a Publix Key Lime Pie. And then we would sit, sandy and sunburned, and each devour a hearty slice of that graham cracker-crusted, sweet and citrusy tart yellow filling and generous dollop of thick whipped cream on top and be so so happy.

I wanted to recreate that sense of Key Lime Pie goodness in bar form, where the basic components of a traditional pie remain but the benefits of a dessert bar also are reaped. And so, these Key Lime Pie Bars were born: a dessert bar baked in a square baking pan with a buttery graham cracker crust, a super-thick, super-tall Key lime filling and a soft, pillowy, cloud-like topping of homemade whipped cream. It’s like being on vacation in Florida again, except I get to sleep in my own bed (a win-win, really).
