This dessert is easy to make. The only hardest part is the waiting! You have to allow it to set properly, preferably overnight, before cutting it.
Yes, you can use ready-made whipped cream or cool whip to make a mango graham recipe. I like the taste and texture of homemade whipped cream though so I always make my own. Also, note that ready-made whipped cream and cool whip are already sweetened so you may not need to add as much condensed milk.
When making mango graham cake or any kind of icebox cake, use fresh fruit as much as possible. Don’t use frozen or canned mangos for this recipe as they tend to make the cake watery.

Everything You Need To Make Mango Float
This dessert is perfect for ripe fresh mangoes. I’m not much of a baker myself, so this mango dessert was very easy for me to assemble. The filipino mango float also only uses 5 ingredients! It’s light, creamy, and perfectly sweet – the perfect dessert for hot summer days.
Instead of refrigerating the mango float, you can also freeze it overnight! When you freeze it overnight, you will end up with an ice cream-like texture. Before serving, let the mango sit out for 30 minutes or until desired softness. This will make it easier for you to cut it as well. I prefer this option when I want to have a delicious ice cream cake 😉

For the mangos, I also recommend yellow mangos (from the Philippines is even better!). I like waiting until the mangoes are super ripe so it’s super sweet. But be careful to not wait too long or else the mango gets too soft to cut.

Have you ever tried Carabao or Manila mangoes from the Philippines? They are the sweetest I've ever had! In the US, a similar variety is Ataulfo mangoes (also known as Honey or Champagne).
Step 1: In a food processor, process about 20 full sheets of graham crackers and ¼ cup brown sugar (if using) into fine crumbs.

Step 2: Add ½ cup melted butter and pulse until combined. Alternatively, you can crush the crackers in a zip-top bag with a rolling pin.

Step 7: Using a stand or hand mixer, whisk 8 ounces of softened cream cheese and ½ cup of condensed milk until smooth.
Step 11: Place half of the mango puree on top. Add the rest of the graham crackers, then the rest of the whipped cream mixture.
Mango Float is best enjoyed within 3 days when the mangoes are fresh. You may freeze it for a more solid texture or to extend its shelf life. Let it thaw in the fridge for a few hours or at room temperature for about 30 minutes before serving.
