Months ago I asked on Instagram for recipe creation ideas. My friend Karla suggested S'mores Brownies. I am embarrassed to say how long it has taken me. To be honest I was kinda over marshmallows and the whole S'mores flavor. I think I just overdid it for a while. Well damn S'mores, I am back and in love. These brownies were freaking fantastic.
Baking is a science and to really achieve the best results I highly recommend investing in a kitchen scale. Think about it -what one person scoops into a cup is completely different from what someone else scoops!
S'mores Brownies From Brownie Mix
There are a few ways to make s'mores brownies out there but I chose to do a crushed graham cracker crust topped with brownies batter, then chocolate and finally toasted marshamallow.
First thing's first we need graham crackers. In a large bowl combine finely crushed graham crackers, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
Pour the crust into the prepared baking pan and use the bottom of a glass or measuring cup to pack the crust tightly.
Decadent Dutch Chocolate S'mores Brownie Bars
Bake crust at 350F/180C for 10 minutes. While the crust is baking prepare brownies. I am biased and love my brownie recipem they are fudgy brownies. Feel free to use a boxed mix, but make sure it's a 9X9 serving size.
When brownies are just baked sprinkle on chocolate pieces and cover the whole pan in mini marshmallows into a single layer turn the broiler on low and place the brownies under the heat to broil.
Watch carefully so they do not burn. Take out and let cool completely. To achieve clean cuts you must run your knife under hot water and clean the knife after each slice.

A crisp bottom layer of graham crackers rests under a chocolaty, chewy layer of brownies topped with soft marshmallows. Nestle in chopped up Hershey’s bars and crumbled graham crackers, bake ‘em for just a few more minutes, and you’ve got yourself a camp-style treat worthy of indulging in for any summer occasion!
These taste exactly like a real s’more, but BETTER, if you can imagine. They definitely didn’t last long at the July 4th party I brought them to!

Whether you’re trying to get your campfire fix or just baking up these bars to share with friends, you’re gonna love them! No bonfire required. Only one bowl, one pan and a little bit of patience while they bake and cool!Step 5: Broil it on low until marshmallows are lightly toasted, about 2 minutes. Watch it closely as you do this. While still hot, top with 1 chocolate bar.
